A few dishes proposed by Reflets des îles: STARTERS : Aubergine fritters, " chouchous " fritters, samoussas Recipe of “rougail boucané” (smoked bacon). Ingredients (5 persons) : 1kg of smoked bacon – 3 onions – 4 cloves of garlic – 5 ripen tomatoes – thyme – salt – oil. Preparation : Cut the smoked bacon into pieces of 2 to 3 cm. Bring to boil for 30 minutes and then drain the smoked bacon. Chop the onions. Grind the garlic, chili and salt. Slice the tomatoes. Heat oil and fry the onions until brownish. Add the spices and thyme. Then, add the tomatoes and cook about 5 minutes. Add the pieces of the smoked bacon and fry for about 30 minutes. Serve hot. |
