Among sweet savoury specialities, are the “balfis” - milk fondants flavoured with rose, vanilla, almond or chocolate. The “nane kataye” is a delicious shortbread biscuit embellished with a rose essence that will catch everyone’s eye. The “bonbon kalou”, a sweet fritter, is a must. Also don’t forget to taste the “napolitains” ; these are tasty cakes toped with a coloured glaze. Indian cuisine uses many natural colours. Rose essence is much used in cake-making, for its apetizing aspect as well as for its tasty flavour.
The “lait alouda” and the cardamom tea have made the reputation of “Le Massalé” restaurant. The “lait alouda” is a mixture of sweet milk and rose syrup, in a proportion kept secret. A smooth and soft drink worth tasting. Cardamom tea also makes an enjoyable refreshment. Unflavoured tea is imported from Mauritius and flavoured with cardamom when boiled ; hence its incomparable taste.
