For the batter: put the flour in a bowl and make a hole. Add one whole egg and one yolk, then the sugar, the salt, the rum and a dash of oil. Gradually add the milk to obtain a mixture of an even consistency and slightly runny. Add the egg white that has been beaten until stiff and allow to rest for one hour. Cut the pineapple slices in 4. Put them in the batter and fry in the deep-fat fryer on each side for one minute. The fritters should be brown. Remove and drain on absorbent paper. Sprinkle with brown sugar.
