Lobster tails with vanilla sauce

Ingredients :

(for 2 personnes)
- 2 lobster tails
- 1 vanilla pod, split in half lengthways
- 75g butter
- 2 tbsp white rum
- 1 lime
- 1 egg
- 1 piece of ginger
- Salt and pepper

Method :

In a high-sided frying pan, fry the lobster tails, ginger, salt, pepper and half the vanilla pods.
Pour in enough water to cover the ingredients and cook over a medium heat for 10 to 15 minutes. Transfer the lobster tails to a serving dish. Set aside.

Preheat the grill. How to make the vanilla sauce?
Melt the butter in a saucepan over a low heat. Then, take it off the heat and pour in the lime juice. Stir well.
Add the egg yolk and season with salt and pepper to taste. Next, add the other half of the vanilla pods.
Grill the lobster tails for about 5 minutes. Heat the rum in a small saucepan. Then, pour the rum over the lobster and flambé.
Drizzle the vanilla sauce over the lobster and serve with white rice.
