- 1,5kg fish - 6 small tomatoes - 6 small onions - 8 garlic cloves - 1 piece of ginger - Zest of 1 small combava - 1/2 tsp curcuma - 1 sprig of thyme - Chilies - Salt and oil
Method :
Scale the fish, clean it and cut into 3 to 4 cm pieces. Thinly slice the onions and cut the tomatoes into small chunks. Pound the salt together with the ginger, garlic, zest of the combava and chilies (optional) into a paste. Heat oil in a pan and fry the fish strips for about 15 minutes. Remove fish and set aside. Next, brown the minced onions gently in the oil for 3 minutes. Then, add the crushed condiments and simmer for 1 minute before adding the tomatoes, curcuma and thyme. Cook for 2 minutes. Stir in the fish strips along with 1 glass of water. Cover with a lid and simmer for about 5 minutes. Serve on a bed of white rice with mango or hog plum chutney.
