Lobster curry

Ingredients :

(for 4 personnes)
- 4 lobsters
- 8 garlic cloves
- 5 onions
- 1 combava
- 1 piece of ginger
- 2 sprigs of thyme
- 8 small tomatoes
- 1/2 tsp curcuma
- 4 to 5 chilies (optional)
- Chives
- Salt, pepper and oil


Method :

Wash the lobsters. Cut each one in half and remove the meat from the claws and tail. Remove any meat from the head and cut the meat up into pieces.
Heat the oil in a pan and gently fry the lobster meat for one minute. Remove the meat and set aside. Brown the chopped onions gently in the oil for 2 minutes. Cut the zest of combava and ginger into pieces. Pound the garlic, together with the zest, ginger, salt and chilies into a paste. Stir in the crushed condiments with the onions and simmer for one minute. Next, add the tomatoes, cut into small pieces and thyme. Pour two glasses of water into the pan.
Allow to cook for about 10 minutes before adding the lobster meat. Cook over a medium heat for 15 minutes. The sauce should reduce.
Serve on a bed of white rice.
