-1,2 kg meat -1 kg carrots, cut into cubes -500g potatoes, cut into large pieces -5 small onions, thinly sliced -6 garlic cloves -3 small tomatoes -1 small piece of ginger -1 sprig of thyme -Parsley and chives -Salt, pepper and oil
Method :
Heat the oil in a pan, add the meat and fry until lightly browned. Meanwhile, crush the garlic together with salt, pepper and ginger into a paste. Then, peel and cut the carrots in half lengthways, and chop into three pieces. Next, add onions, crushed condiments, tomatoes and thymes and cook over a low heat for 3 minutes. Add carrots and potatoes to the meat curry, 10 minutes before the end of cooking time. Pour over some water, and lower the heat as soon as it starts to boil and continue to simmer until most of the liquid has evaporated. The sauce should be smooth. Sprinkle with finely chopped parsley and chives.
