Chicken dip in a litchi-flavoured sauce by Brigitte Grondin

Serves : 6 persons
1 Cimendef chicken, cut into chunks 4 medium-sized onions, cut into large pieces 6 garlic cloves 30g ginger 2 cloves 1 tsp pepper seeds 3 tbsp honey 4 tbsp aged rum 1kg litchis 3tbsp oil Salt
Method :
Peel and deseed the litchis. Put them in a strainer over a deep dish to squeeze out the juice. Heat the oil in a pan. Simmer the chicken pieces until golden brown. Moisten with aged rum and add the onions, garlic and ginger. Stir in the honey, cloves and pepper seeds before pouring in the litchi juice. Add 1 litre of water and leave to cook for 30 minutes over a medium heat. Stir in the litchi and simmer for 20 minutes more. Season with salt and pepper if required.
