- 250g green ginger - 400g sugar - 25cl water
Method :
Finely peel the roots of the green ginger. Cut it in dice or in short stick. Dip in cold water for 1 hour. Drain the ginger and immerse it in cold water again. Bring it to boil. Continue to boil for 5 minutes. Drain it and repeat this process 2 to 4 times, according to your taste, i.e, whether you want a strong taste of ginger or not. Boil the sugar and water for 5 minutes and pour it all on the ginger. Cover it with a dish and allow to soak for 12 hours. Drain the syrup and again boil it for 10 minutes. Pour the boiling syrup on the ginger and leave to rest for 2 days. After that, boil for 5 minutes and leave to rest for 2 to 3 days. The roots should become tender, rise and transparent. Otherwise, cook for 5 to 8 minutes more. Store ginger in sterilized jars.
