-200g flour -2 eggs -1/2 sachet of baking powder -Salt and vetsin -3 aubergines -Oil
Method :
For the batter: mix the flour together with eggs, salt, baking powder and vetsin. Cut the aubergines into medium-sized slices and sprinkle with salt and leave to drain. Next, dip the slices into the batter and deep fry both sides until golden brown. Remove the fritters from the oil, drain on kitchen paper, and then place on a serving plate.
