Makes 4 pots of 500g each -1 kg ripe unharmed bananas -750g brown sugar -3dl water -3 limes -1 tsp powdered cinnamon -3 vanilla pods -1 pinch powdered ginger -1/2dl rum
Method :
Peel the bananas and cut them into thin slices. Mix the water together with the lemon juice, the sugar, the contents of the vanilla pods and the ginger. Cook over a moderate heat, stirring constantly with a wooden spoon. Add the banana slices. Cook for 15 minutes, stirring from time to time. Take it off the heat and add the rum. Mix all the ingredients together. Cook again over a low heat for 15 minutes, stirring constantly. Pour into jam pots.
