- 1 andouillette sausage - 3 big onions - 8 small tomatoes - Salt and oil
Method :
Fill a pan with water, add the andouillette sausage and allow it to boil for one hour. Meanwhile, finely chop the onions and cut the tomatoes into small pieces. Once, the andouillette sausage has boiled, cut it into thick slices. Heat 2 tablespoons of oil in a pan and gently fry the sausage for about 3 minutes. Add the onions and fry until they are transparent. Next, add the tomatoes and simmer over a medium heat. Season with salt to taste. Cook until most of the sauce has reduced.
