-2 kg pork steak or pork leg -1 garlic head -4 cloves -1 sprig of thyme -Salt, pepper and oil
Method :
Crush the cloves, salt, pepper and thyme to a paste. Next, score the pork flesh and rub some of the crushed condiments into the cuts. Rub the rest of the crushed condiments all over the pork meat. Heat the oil in a pan. When hot, add the meat and fry over a medium heat, turning occasionally until golden brown. Pour water over and bring to the boil. Cover with a lid and simmer over a low heat for about 1 hour. The sauce should become smooth.
