Coconut Tart

Ingredients :


-3 eggs
-1 coffee cup full of sugar
-1 pinch salt
-2 tsp cornflour
-1 tbsp melted butter
-2 tea cups full of milk
-1 tea cup full of grated coconut
-2 tbsp rum
-1 pinch nutmeg
-1 pastry case (shortcrust or sablé)

Method :

Whip the yolks together with the sugar unitl you obtain a white mixture. Add the salt, the cornflour and the butter. Pour the milkin, stirring constantly. Put over a bain-marie and stir until it gets thick. Add the grated coconut and allow it to cool down. Pre-cook the pastry in the oven. Add the rum and the nutmeg to the mixture and pour into the pastry case. Cover with the stiffly beaten egg whites. Bake in a slow oven for 15 to 20 minutes.
