-2 fully ripe mangoes -125 g sugar -250 ml water -1 lime
Method :
Cut the mangoes in half. Remove the stones and the pulp. Purée the pulp through a fine sieve. Put the sugar, the water and the lime zest in a saucepan and bring to the boil. Leave to simmer over a gentle heat for 5 minutes. Allow to cool. Add the puréed mangoes and the lime juice to the syrup. Pour the mixture into a ice-cream maker. Stir until set.
