-6 eggs -5 tbsp sugar -1/2 tsp powdered vanilla -1 pinch salt -1 knob of butter
Method :
Beat the egg whites until stiff with a pinch of salt. Add 3 tablespoons of sugar and keep beating. Add the yolks, then the powdered vanilla. Beat for a few minutes. Grease an ovenproof tin with butter and sprinkle with sugar. Pour the mixture into a dish and smooth with a spatula. Bake in a warm oven for 10 minutes. Sprinkle the omelette with sugar and allow it to caramelise under the grill.
