Coconut Ice Cream

Ingredients :


-2 coconuts
-500 ml water
-150 g sugar
-water of the 2 coconuts
-2 vanilla pods
-1 cinnamon stick
-zest of 1 lemon
-250 g condensed milk

Method :

Split the coconuts open, remove the fruit from the nut and grate. Bring the water to the boil with the sugar, the coconut milk, the vanilla pod split in half lengthways, the cinnamon and the lemon zest. Pour the boiling mixture onto the grated coconut and leave to infuse for about one hour. Drain in a sieve and reserve. Put the grated coconut in a clean cloth and wring out over the cooking milk. Remove the cinnamon stick and the lemon zest. Add the condensed milk. Pour the mixture into a ice-tray and allow to set, stirring occasionnaly.
